Mexican-Style Corn
After a long hard week we decided we were going to turn to Jamie to cook us up some comfort food. Leah and I picked out two receipes to try out and went to the grocery store to pick up the ingredients. Parmesean cheese, mini pasta shells, lemons, limes and a loaf of French Bread were on our list. Fresh mint taken from our garden was a bonus! We were ready to cookup a delicious meal. The aroma of bacon, peas, mint, and cream was waffling in the air when Harry came home asking when supper was going to be served. The dishes were completed in a short period of time, thanks to Jamie`s great receipes. :)
The corn on the cob was a favorite with all three of us - a definite repeat. With the lime juice, butter and red chilies plastered on the cob, we bit into very spicy corn. Thank goodness for the bread and juice we had on hand. The mint in the Pasta dish was spectacular - peas and mint go hand in hand. Delish!
